Old-fashioned Corn Relish
Ingredients
1-ear fresh corn.
¼ cup diced onion.
1/3 cup diced bell pepper.
¼ cup sugar.
2 tablespoons cider vinegar.
Salt and pepper to taste.
Instructions
Microwave corn, in the husks, on High until steaming and just tender, 4 to 5 minutes. When cool enough to handle, remove the husks and silk. (Alternatively, bring a large pot of water to a boil. Remove husks and silk from the corn and boil until just tender, about 5 minutes.) Slice the kernels from the corn using a knife.
Combine the corn kernels, onion, bell pepper, vinegar, salt, and pepper in a medium bowl. Serve at room temperature or cold.
Tip
Cover and refrigerate for up to 3 days.
