Delicious Steamed Vegetables
Ingredients
½ pound eggplant, washed and diced
½ pound zucchini, washed and diced
½ bell pepper, washed and diced
1/8 cup water
¼ teaspoon celery salt
Pinch of pepper
2 tablespoons butter, melted
Instructions
Place eggplant, zucchini, and bell pepper in a 1-1/2-qt. microwave-safe dish; add water. Sprinkle with celery salt and pepper. Cover and microwave on high for 6-8 minutes or until tender, stirring and rotating ingredients a quarter turn every 2 minutes. Drain moisture. Toss with butter.
