1 sweet potato washed, peeled and cut into 1-inch chunks
1 tablespoon olive oil
½ red onion, chopped
½ bell pepper, washed and chopped
1 tablespoon rosemary leaves, finely chopped
Salt & pepper
Preheat oven to 375°. On a large, rimmed baking sheet, toss sweet potatoes with bell peppers, onion, and oil. Season with salt and pepper. Scatter rosemary on top.
Bake for about 30 minutes until sweet potatoes are crispy on the outside and tender on the inside. Shake the pan about 15 minutes through baking.
