2 medium overripe banana, mashed
1 ½ cup rolled oats
2 tbsp chia seeds(optional)
½ cup milk of yourchoice
1 tsp baking soda
1 tsp vanilla extract
1 tsp cinnamon,ground
Dash of salt
2 tbsp cooking oil (e.g. coconut, canola,grapeseed, olive) (for the skillet)
METHOD OF PREPARATION
Add the bananas, eggs,rolled oats, chia seeds, milk, baking soda, vanilla, cinnamon, and salt into a blender.Blend until smooth. Set aside.
Lightly coat a skillet with skillet with the oil.Once the pan is hot add¼-½ cup batter,depending on your preference for size.Cook the pancakes for2-3 minutes per side.When you start to see bubbles around the edges on the pancake,it is time to flip.
Repeat until all the batter is used up.
Turn off the stove and enjoy!
