INGREDIENTS
2 cups cooked white beans, cooled
1/2 cup red onion, diced
1/2 cup tomato, diced
1/2 cup yellow bell pepper or other color, diced
1 lemon, juiced
1 tbsp olive oil
1/2 tsp salt
ground black pepper, to taste
1/4 cup fresh parsley, chopped
METHOD OF PREPARATION
In a medium serving bowl, combine all ingredients and mix well.
Taste and adjust seasonings.
