Ingredients
2-1/2 cups low sodium chicken broth or water
2 cups frozen chopped carrot, onion, celery blend OR:
- 1 medium yellow onion, chopped
- 2 ea. medium carrots, diced
- 2 ea. stalks celery, diced
2-1/2 cups potato flakes
1/2 cup heavy cream or milk
1/4 tsp salt, or to taste
1/4 tsp black pepper, or to taste
1/4 tsp garlic powder
Optional Toppings: cheddar cheese, bacon, fresh herbs, diced bell pepper, red pepper flakes
Method of Preparation
- In a large pot, add broth and vegetables and bring to a simmer for 5 minutes (10 minutes if using fresh vegetables). Remove from heat.
- Add potato flakes, heavy cream (or milk), salt, pepper, and garlic and stir to mix. Add more milk or water for thinner soup. Add more potato flakes for a thicker soup.
- Taste and adjust seasonings.
- Top with your favorite additions and enjoy!
